Instructions:
Marination:
- In a bowl, mix yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt to form a smooth marinade.
- Add chicken pieces to the marinade, ensuring they are well-coated. Allow it to marinate for at least 1 hour (preferably overnight for richer flavor).
Cooking Rice:
- Rinse Basmati rice thoroughly and soak it in water for 30 minutes.
- In a large pot, bring water to a boil. Add salt and cumin seeds.
- Add soaked rice and cook until it is 70-80% cooked. Drain and set aside.
Biryani Preparation:
- In a heavy-bottomed pan, heat oil or ghee. Add cloves, green cardamom, bay leaves, and cumin seeds. SautƩ until fragrant.
- Add sliced onions and cook until golden brown.
- Add chopped tomatoes and cook until they are soft.
- Add marinated chicken and cook until it is 70% cooked.
- In a layering fashion, add the partially cooked rice over the chicken.
- Sprinkle garam masala, half of the chopped coriander, mint, and green chilies over the rice.
- Drizzle a bit of ghee over the top for added flavor.
- Cover the pot with a tight lid and cook on low heat for 20-25 minutes, allowing the biryani to steam.
Final Touch:
- Once done, gently mix the biryani without breaking the rice.
- Garnish with the remaining coriander and mint.
- Serve hot with raita or a side salad.
