Instructions:

Marination:

  1. In a bowl, mix yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt to form a smooth marinade.
  2. Add chicken pieces to the marinade, ensuring they are well-coated. Allow it to marinate for at least 1 hour (preferably overnight for richer flavor).

Cooking Rice:

  1. Rinse Basmati rice thoroughly and soak it in water for 30 minutes.
  2. In a large pot, bring water to a boil. Add salt and cumin seeds.
  3. Add soaked rice and cook until it is 70-80% cooked. Drain and set aside.

Biryani Preparation:

  1. In a heavy-bottomed pan, heat oil or ghee. Add cloves, green cardamom, bay leaves, and cumin seeds. SautƩ until fragrant.
  2. Add sliced onions and cook until golden brown.
  3. Add chopped tomatoes and cook until they are soft.
  4. Add marinated chicken and cook until it is 70% cooked.
  5. In a layering fashion, add the partially cooked rice over the chicken.
  6. Sprinkle garam masala, half of the chopped coriander, mint, and green chilies over the rice.
  7. Drizzle a bit of ghee over the top for added flavor.
  8. Cover the pot with a tight lid and cook on low heat for 20-25 minutes, allowing the biryani to steam.

Final Touch:

  1. Once done, gently mix the biryani without breaking the rice.
  2. Garnish with the remaining coriander and mint.
  3. Serve hot with raita or a side salad.
